That’s why we love recipes like this one-pan creamy sausage and tomato rigatoni.
It’s hearty, ready in 35 minutes, and uses simple ingredients we picked up our ingredients from the Tesco Finest range. The mascarpone makes it silky smooth, the sausage gives it depth, and the rigatoni soaks up all that rich tomato sauce.
Pair it with our Organic Sicilian Red (straight from the fridge in a can or bottle), and you’ve got yourself a little taste of Italy at home.
One-Pan Creamy Sausage and Tomato Rigatoni

Time: 35 minutes
Ingredients
- 1 tbsp olive oil
- 3 Tesco Finest Signature Pork Sausages, skins removed
- 1 medium onion, thinly sliced
- 2 garlic cloves, finely chopped
- A pinch of dried oregano
- 170 g dried rigatoni pasta
- 1 × 400 g tin chopped tomatoes
- 1 tbsp Tesco Finest Tomato & Balsamic Tapenade
- 400ml chicken stock (enough to just cover pasta)
- 60g mascarpone cheese
- Parmesan cheese, to serve
- Sea salt and freshly ground black pepper, to taste

Method
- Heat the olive oil in a large deep frying pan or casserole dish over a medium heat.
- Add the sausage meat (skins removed), breaking it up with a spoon, and fry until browned. This should take around 5-7 minutes.
- Add the sliced onion, cook for 5 minutes or until softened then add the garlic cook for a further minute, then stir in the dried oregano.
- Stir in the chopped tomatoes, tomato & balsamic tapenade and the rigatoni.
- Pour over the chicken stock (just enough to cover). Bring to the boil, then reduce to a simmer.
Cover and allow to simmer, stirring occasionally, for 12–14 minutes until the pasta is al dente and most of the liquid has been absorbed. - Stir through the mascarpone until smooth and silky. Add a splash of more stock if you’d like a looser sauce.
- Taste and season with salt and black pepper. Scatter over the fresh basil, and serve with extra Parmesan at the table.
